She says this soup "is simple to make and, because it is kale, it is loaded with nutrition. Spinach can be substituted which is good because spinach is generally readily available where kale is not always … I am sure you can add meat if you wish, because soup is so flexible."

Here's how to turn a pound of beef and a carrot into tasty main dish burgers in less than 20 minutes. These make a particularly nice accompaniment to a salad or served open face on a slice of toast.

Try running your fingers down the kale stem and all the leaves will separate easily, allowing you to cut or snip them into 1-inch pieces. This step helps to eliminate the time-consuming task of getting this green prepped and into the oven for a delightfully crispy treat.
