Tuna Patties Recipe

This tuna recipe offers an easy way to turn a lowly can of tuna into a main dish by going the patty way—a quick answer to dress up this humble protein. Double this recipe if you’ve got a hungry crew on hand—two cans of tuna can provide a hearty main dish protein for 4 to 6 people.
|1||cn||6-oz. tuna (drained)|
|1⁄2||c||breadcrumbs (or 1 slice bread, crumbled)|
|1⁄4||c||veggies, diced (scallions, red or green peppers are good)|
|1⁄4||t||Adobo* (or salt)|
|2||T||olive oil (light)|
- In a medium-size mixing bowl, stir together the drained tuna, breadcrumbs, mustard and mayo. Dice veggies that you’ll be using and add them also. Stir everything together with a fork, sprinkle with Adobo, and mix in well.
- At the stove, pour olive oil into large skillet over medium-high heat. Scoop patties in ¼-cupfuls into the pan, lightly pressing together with your hands. Brown in the oil for about 2-3 minutes per side, placing the lid on when you flip them to the other side.
- Then turn the heat to medium to finish cooking. Patties are done when they are golden brown on each side.
