This hearty seitan fajitas recipe is a satisfying vegetarian meal that's quick to pull together and can make a wonderful main dish for a festive Mexican meal.
Chop the onion and pepper into small ¼-inch pieces. Chop garlic or set the jar of prepared garlic nearby. Place large non-stick skillet over medium heat and warm for 1 minute. Pour in the olive oil and swirl around the bottom of the pan. Add the onion, green pepper and garlic and sauté for 3-5 minutes. Meanwhile, slice the seitan into thin strips. Stir in Adobo, cumin and chili powder and sauté for another minute.
Next, add the seitan to the pan and cook for about 5 minutes until the seitan begins to brown. While the seitan is cooking, prepare your selected toppings (salsa, lettuce, cheese, sour cream, etc.).
Add the frozen green beans to the pan and cover. Cook for 5 more minutes or until beans have reached the desired tenderness. Add water, 1 tablespoon at a time, if necessary to prevent sticking.
To serve, spread tortillas with 1-2 tablespoons of salsa, sour cream or salsa-cream cheese. Put a generous half-cup of seitan filling over the spread. Sprinkle on your desired toppings. Roll up the tortilla and serve immediately.
