This hearty seitan fajitas recipe is a satisfying vegetarian meal that's quick to pull together and can make a wonderful main dish for a festive Mexican meal.
|1||onion - medium|
|1||green pepper - medium|
|1||T||olive oil (light)|
|3||c||seitan or 1 16-oz. package|
|1⁄4||t||Adobo* (or salt)|
|1||c||french-cut greenbeans, frozen (optional)|
|6||soft flour tortillas - large|
- Chop the onion and pepper into small ¼-inch pieces. Chop garlic or set the jar of prepared garlic nearby. Place large non-stick skillet over medium heat and warm for 1 minute. Pour in the olive oil and swirl around the bottom of the pan. Add the onion, green pepper and garlic and sauté for 3-5 minutes. Meanwhile, slice the seitan into thin strips. Stir in Adobo, cumin and chili powder and sauté for another minute.
- Next, add the seitan to the pan and cook for about 5 minutes until the seitan begins to brown. While the seitan is cooking, prepare your selected toppings (salsa, lettuce, cheese, sour cream, etc.).
- Add the frozen green beans to the pan and cover. Cook for 5 more minutes or until beans have reached the desired tenderness. Add water, 1 tablespoon at a time, if necessary to prevent sticking.
- To serve, spread tortillas with 1-2 tablespoons of salsa, sour cream or salsa-cream cheese. Put a generous half-cup of seitan filling over the spread. Sprinkle on your desired toppings. Roll up the tortilla and serve immediately.
