Description
This sausage skillet dinner recipe offers either a savory or sweet twist by adding either onion or apple. While the meat cooks, sauté your vegetable side dish, and in only 15 minutes dinner will be ready to serve.
Ingredients
| 1 1⁄2 | lb | rope or link sausage |
| 1⁄4 | c | water |
| 1 | T | olive oil (light) + 1 tsp. for the veggies |
| 1 | onion or apple - medium | |
| 1⁄2 | t | Adobo* (or salt) - save 1/4 teaspoon for veggies |
| 2 | carrots - large | |
| 1 | c | asparagus, frozen (or other quick-cooking veggies like green beans, broccoli or mixed veggies) |

Instructions
- If using rope sausage, first cut into 2- or 3-inch pieces. Place sausage, water and oil into large skillet over high heat. Bring to a boil and then cover, lower heat and cook for 15 min., setting the timer for about 8 minutes (for next step).
- Meanwhile, slice the carrots thinly and cut the asparagus ino 2-inch pieces. When there are 5-7 minutes remaining on the sausage cook time, remove the lid from the sausage, add the sliced onion or apple, (or both if you like the flavors to mingle), sprinkle with 1/4 teaspoon of Adobo, and sauté for remaining time until the sausage is golden and the onions and/or apples are tender.
- While the sausage and apples and/or onions finish cooking, it’s time to cook the other veggies: using another burner on the stove, turn the heat on high, and place a large skillet on that burner. Pour in 1 teaspoon oil, add the carrots, sprinkle with 1/4 teaspoon Adobo and sauté for 3 minutes.
- Add the asparagus and sauté for 2-4 more minutes, until carrots and asparagus are tender. About this time, the sausage will be done, onions (and/or apples) will be golden. Both dishes are now ready to serve!
