This ramen noodle recipe is a fast way to turn a package of ramen noodles into a more satisfying meal—and helps meet that 5-a-day quota. Choose two different quick-cooking fresh or frozen veggies, add seasonings, and in just a handful of minutes dinner is served. Use your own msg-free bouillon cube or all-veggie bouillon if you don't prefer the seasoning packet.
Ingredients
3
c
water
1
c
asparagus, frozen (or other quick-cooking veggies)
1
carrot - medium
1
pk
ramen noodles
Instructions
Bring the water to a boil in a small pot. Meanwhile, chop the veggies into small pieces, if needed.
When water is boiling, add the ramen noodles, the vegetables and the seasoning packet (or your preferred bouillon cube), and boil for 3 minutes, stirring once to break the noodles up. After 3 minutes, the vegetables should be lightly tender, the noodles cooked, and it's time to dish it up and enjoy!
