Description

This quick ravioli recipe starts with frozen ready-to-cook ravioli (pierogies would work too). It could also be called garlic-lovers' ravioli since it uses about 8 cloves -- a delightful combo with the spinach and feta cheese.

Ingredients

1pkravioli, frozen (large bag: about 50-60)
1pk10-oz. spinach, frozen
4tchopped garlic
4Tolive oil (light)
1tdried oregano
1⁄2tAdobo* (or salt)
4ozfeta cheese (about 1/2 cup)
  black pepper
Parmesan/Romano grated cheese - for topping

Instructions

  1. Bring 2 quarts water to a boil; add ravioli and cook according to package directions (10 minutes). Place frozen spinach in microwave for 1 - 2 minutes to thaw slightly. Chop garlic or set the jar of chopped, prepared garlic nearby.

  2. Meanwhile, pour oil into large skillet over medium heat. Add garlic and sauté for 1 minute. Break spinach into chunks, add to pan and sprinkle with oregano and Adobo and simmer for 4-5 minutes. Turn off heat. Crumble feta cheese on top.

  3. Use a colander to drain the ravioli. Return ravioli to pan and scoop the garlic/spinach sauce on top, mixing gently.

Top with black pepper and Parmesan cheese, if you like.
