Quick Ravioli Recipe: Greek-style with Spinach & Feta

Description
This quick ravioli recipe starts with frozen ready-to-cook ravioli (pierogies would work too). It could also be called garlic-lovers' ravioli since it uses about 8 cloves -- a delightful combo with the spinach and feta cheese.
Ingredients
| 1 | pk | ravioli, frozen (large bag: about 50-60) |
| 1 | pk | 10-oz. spinach, frozen |
| 4 | t | chopped garlic |
| 4 | T | olive oil (light) |
| 1 | t | dried oregano |
| 1⁄2 | t | Adobo* (or salt) |
| 4 | oz | feta cheese (about 1/2 cup) |
| black pepper | ||
| Parmesan/Romano grated cheese - for topping |
Instructions
- Bring 2 quarts water to a boil; add ravioli and cook according to package directions (10 minutes). Place frozen spinach in microwave for 1 - 2 minutes to thaw slightly. Chop garlic or set the jar of chopped, prepared garlic nearby.
- Meanwhile, pour oil into large skillet over medium heat. Add garlic and sauté for 1 minute. Break spinach into chunks, add to pan and sprinkle with oregano and Adobo and simmer for 4-5 minutes. Turn off heat. Crumble feta cheese on top.
- Use a colander to drain the ravioli. Return ravioli to pan and scoop the garlic/spinach sauce on top, mixing gently.
Top with black pepper and Parmesan cheese, if you like.
