Description
Thanks to Country Ovens for this puffy oven pancake recipe, a sweet breakfast delight that uses dried cherries (it's delicious with chocolate-covered cherries too). Reduce the eggs to one for 'less eggy' flavor. Serve sprinkled with powdered sugar.
Ingredients
| 2 | T | butter or margarine |
| 2 | T | brown sugar |
| 1⁄4 | t | cinnamon |
| 1⁄2 | c | dried cherries |
| 2 | large eggs (or less) | |
| 1⁄2 | c | flour |
| 1⁄2 | c | milk |
| 1⁄4 | t | salt |
Instructions
Preheat oven to 400º F.
- Melt butter in pie plate in oven. Brush butter on sides of pie plate. Sprinkle the brown sugar and cinnamon over the melted butter. Arrange the dried cherries over sugar.
- Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in remaining ingredients until just mixed. Pour batter over cherries.
- Bake 20 minutes. Immediately loosen around edge and turn upside-down onto a plate. Serve warm or cool.
