Description

Thanks to Country Ovens for this puffy oven pancake recipe, a sweet breakfast delight that uses dried cherries (it's delicious with chocolate-covered cherries too). Reduce the eggs to one for 'less eggy' flavor. Serve sprinkled with powdered sugar.

Ingredients

2Tbutter or margarine
2Tbrown sugar
1⁄4tcinnamon
1⁄2cdried cherries
2 large eggs (or less)
1⁄2cflour
1⁄2cmilk
1⁄4tsalt

Instructions

Preheat oven to 400º F.

  1. Melt butter in pie plate in oven. Brush butter on sides of pie plate. Sprinkle the brown sugar and cinnamon over the melted butter. Arrange the dried cherries over sugar.
  2. Beat eggs slightly in medium bowl with wire whisk or hand beater. Beat in remaining ingredients until just mixed. Pour batter over cherries.
  3. Bake 20 minutes. Immediately loosen around edge and turn upside-down onto a plate. Serve warm or cool.
