Peanut Butter Blossom Cookies

Description

This recipe is a family favorite since it's not only fun for several people to make together, it offers jobs for all ages (rolling balls of dough, dipping in sugar, unwrapping kisses, etc.). Best of all, it's quick and delicious -- whether straight from the oven (yummy warm, melty chocolate!) or frozen for later use.

Ingredients

  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 2 eggs - large
  • 2 teaspoons vanilla
  • 1 cup peanut butter - creamy
  • 4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • when ready to bake:
  • 2 tablespoons sugar (for rolling)
  • 1 1⁄2 pound Hershey Kisses

Directions

Preheat oven to 375ºF.

  1. Using an electric mixer, beat the sugars and butter together until creamy. Add the eggs and vanilla. Add the peanut butter and mix well.
  2. In a separate bowl, stir together the flour, baking soda and salt. Add to the creamy peanut butter mixture. Beat on low speed until a soft dough forms.
  3. When ready to bake (may refrigerate dough up to one week): roll dough into 1-inch diameter balls and roll in sugar. Place on baking sheet.
  4. Bake cookies for 6-8 minutes, until puffy and lightly golden. While cookies are baking, unwrap kisses. Remove cookies from oven. While still on baking sheet, press one chocolate kiss into the center of each cookie. Allow to cool (kisses will become warm and soft but will completely harden in several hours).
