Peach Pockets

Description
When you're in the mood for peach pie but don't have the time, try a quick peach pocket. Jenny says, "I was in the mood for apple pie but had no apples, so I created this. It's delicious and is a good way to get some of your fruit for the day."
Ingredients
- vegetable oil spray
- 1 soft flour tortilla
- 1 teaspoon cinnamon sugar
- 1 medium peach
- 1 tablespoon sugar
Goes Well With
vanilla ice cream, milk
Directions
- Place a nonstick skillet over medium-high heat. Spray generously with vegetable oil spray and place tortilla into pan. Sprinkle half of cinnamon sugar over tortilla and warm for 15-20 seconds.
- Flip tortilla and sprinkle with remaining cinnamon sugar. Remove tortilla from pan and set aside.
- Peel and dice peach into 1/8-inch pieces and place into pan over medium-high heat. Sprinkle with sugar and cook for 2 minutes until softened. Scoop cooked peaches onto warm tortilla and roll up, folding ends in. Dig in!
