Soft flour tortillas are super-handy to keep in the fridge and freezer for roll-up and wrap recipes. Add lettuce or whatever veggies, meats and cheeses you’ve got on hand, and you’ll have a satisfying meal in less time than it takes to order a pizza!
Ingredients

soft tortilla
1⁄3
c
feta cheese or 2 slices meat or cheese: ham, turkey, american, cheddar (or whatever's on hand)
sli

lettuce leaves - large

dressing: Ranch, Italian, Caesar (or your fave)
olive oil to brush on pan
Instructions
Heat a heavy skillet over medium heat, brush lightly with olive oil and warm tortilla on both sides until golden. Turn off heat, top tortilla with feta cheese and replace lid for 1-2 minutes to warm.
Meanwhile, chop the lettuce finely. Slide tortilla onto plate and top with greens and dressing. Top with additions, if you like: sliced, marinated Greek olives taste great. Roll-up, cut in half, and enjoy!
