Mediterranean Roll-up & Wrap Recipe

Soft flour tortillas are super-handy to keep in the fridge and freezer for roll-up and wrap recipes. Add lettuce or whatever veggies, meats and cheeses you’ve got on hand, and you’ll have a satisfying meal in less time than it takes to order a pizza!
|1⁄3||c||feta cheese or 2 slices meat or cheese: ham, turkey, american, cheddar (or whatever's on hand)|
|sli||meat or cheese: ham, turkey, American, cheddar (or whatever's on hand)|
|2||lettuce leaves - large|
|1||T||dressing: Ranch, Italian, Caesar (or your fave)|
|olive oil to brush on pan|
- Heat a heavy skillet over medium heat, brush lightly with olive oil and warm tortilla on both sides until golden. Turn off heat, top tortilla with feta cheese and replace lid for 1-2 minutes to warm.
- Meanwhile, chop the lettuce finely. Slide tortilla onto plate and top with greens and dressing. Top with additions, if you like: sliced, marinated Greek olives taste great. Roll-up, cut in half, and enjoy!
