Lentil Burgers

Description
If you're lucky enough to have some canned lentils on hand, they make one heck of a good 'meatless burger.'
Ingredients
- 1 can 15.5-oz. can, drained (or 1-1/2 cups cooked)
- 1 teaspoon chopped garlic
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon paprika
- 1⁄2 teaspoon dried parsley (optional)
- 1⁄3 cup quick oats
- 1⁄8 cup flour
- 2 teaspoons soy sauce
- 1⁄3 cup cornmeal
- 2 tablespoons olive oil (light)

rice or grain, pasta, noodles, potatoes, tossed salad, any lightly cooked veggie

Directions
- Chop garlic or open the jar of prepared garlic. Combine lentils, garlic, oregano, paprika, parsley, oats, flour and soy sauce in medium-size bowl, smashing lentils against side of the bowl to promote stickiness. Let mixture set for 5 minutes. If mixture seems too wet, add more flour, a little at a time, to help bind lentils together.
- Roll into small ¼-cup size balls. Gently but firmly flatten into patties, and coat both sides of patties in cornmeal.
- Place heavy skillet over medium heat, add oil and swirl to coat bottom. Add patties, and brown approximately 2-3 minutes per side.
