Description

This divine frozen peanut butter cream pie recipe is quick and easy to mix: just a few minutes in the blender, then pour it into a prepared graham crust shell (regular or chocolate) and freeze. We've been known to dig in and indulge before it's completely frozen too!

Ingredients

1 12 - 16 oz. pkg. silken tofu
3⁄4 cup peanut butter
1⁄2csugar
1tvanilla
1⁄8tsalt
1⁄3cwater
1⁄4cchocolate chips (optional)
1 9-inch prepared graham or chocolate graham crust
  whipped cream (optional)

Instructions

  1. Place all ingredients except chocolate chips (and prepared pie crust and whipped cream) into blender jar. Blend until creamy (about 2 minutes), scraping down sides of blender with spatula several times.
  2. Sprinkle half of chips on bottom of pie crust, then pour filling in. Sprinkle remaining chips on top. Cover and place into freezer for at least 2 hours, until firm. Once pie is completely frozen, allow to thaw for about 15 minutes before slicing. Serve with whipped cream, if you like.
