Fried Feta Cheese Recipe

This fried feta cheese recipe is a fabulously easy way to grill feta cheese. It brings out the chewy texture, mellows the tang, adds a crisp layer and is a wonderful accompaniment to tossed green salads, fresh vegetables and wraps.

Cut feta cheese into 1/4-inch slices. Heat a non-stick skillet over medium heat and pour olive oil into pan (about one tablespoon per four slices), swirling so that the bottom is covered. Place feta slices into pan--they will sizzle--and top with a sprinkling of oregano and basil. Let slices cook for 3-4 minutes and then turn heat off and let set for 3-4 minutes. Remove with a spatula and enjoy!
