Fresh Shrimp-Dill Salad

Description

This easy cool shrimp salad is quick to pull together for a fast summertime meal. Thanks to Alison Lewis of Ingredients, Inc. for this refreshing salad recipe.

Ingredients

  • 2 pounds large cooked shrimp
  • 1⁄2 cup reduced-fat mayonnaise
  • 2 tablespoons white wine vinegar
  • 2 teaspoons Dijon mustard
  • 4 tablespoons finely chopped fresh dil
  • 1⁄2 teaspoon freshly ground pepper
  • 1⁄3 cup finely chopped red onion
  • 1 cup finely chopped celery

Goes Well With

Crusty bread and mixed greens

Directions

1. Place shrimp in a large bowl; set side.

2. Whisk together the mayonnaise, vinegar, Dijon mustard, dill and pepper. Add to the shrimp. Add the red onion and celery, tossing gently. Chill and serve or cover and refrigerate for up to 2 days.
