Description

Need a new idea of what to do with cukes? Here's an easy one. This dilly cucumber salad recipe is best eaten the first day, since it can get watery if it sits more than 24 hours.

Ingredients

1 onion - small
2 cucumbers - medium
1⁄8tsalt
1⁄4tdried dillweed
2Tsour cream, low-fat
1pnblack pepper

Instructions

  1. Slice onion thinly, place in a small bowl and sprinkle salt on top, thoroughly mixing salt into the slices (hands work great for this!). Let sit for 5 minutes. Meanwhile, slice cucumbers thinly (peel also, if waxed or skins are thick), and place in a medium-size bowl.
  2. Now, squeeze excess water off onions and add to the sliced cukes. Add remaining ingredients and mix gently with sliced cucumbers.
