Crockpot Pork and Sauerkraut Recipe

This easy crockpot pork and sauerkraut recipe is a classic Lancaster County meal. It's traditionally served for New Year's good luck, yet it's one of the best crockpot pork recipes to make year-round. Add the potatoes when you start the roast and it's truly a one pot meal.


1 3-4 lb. pork loin roast
1⁄4tblack pepper
1cn27- or 32-oz. sauerkraut (with juice)
1chot water
12 small whole potatoes (or cut larger ones into 2-3-inch chunks) - optional
2tolive oil (light)


  1. Place pork roast in bottom of slowcooker. Sprinkle with salt and pepper. Spoon the sauerkraut around the roast, add the hot water, and (if using), place the potatoes on top of the kraut. Drizzle olive oil over the potatoes.
  2. Cook on HIGH for 1 hour, then reduce to LOW for 4 to 6 hours. Alternately cook on LOW for 8 to 10 hours. Ready to serve when internal temperature of the roast is at least 160ºF (it will be quite tender and 'easily falling apart' when done).
