Description
Thanks to Orchard Country for this chicken marsala with mushrooms recipe. If you don't have the Black Cherry wine, you can substitute a sweet red wine--although you won't get the rich cherry flavor imparted by this particular variety. Black Cherry wine is available online through Orchard Country's store.
Ingredients
| 4 | boneless chicken breasts (skinless) | |
| 1⁄4 | c | flour |
| 2 | T | butter |
| 1⁄2 | c | sliced mushrooms |
| 1⁄2 | c | dried Montmorency cherries |
| 1 | c | Orchard Country Black Cherry wine |
| 2 | T | parsley |
| 2 | T | rosemary |
Instructions
- Lay chicken breasts between wax paper and pound until thin. Cut into strips. Dredge both sides in flour.
- In large skillet, melt butter--add mushrooms and dried cherries. Saute over medium heat till browned--approximately 6-10 minutes. Remove and set aside.
- Add chicken to skillet and cook 4 minutes on each side till fully cooked. Return mushrooms and cherries mixture to skillet--add wine, parsley and rosemary. Simmer 5-10 minutes or until liquid is caramelized.
