Description

Thanks to Orchard Country for this chicken marsala with mushrooms recipe. If you don't have the Black Cherry wine, you can substitute a sweet red wine--although you won't get the rich cherry flavor imparted by this particular variety. Black Cherry wine is available online through Orchard Country's store.

Ingredients

4 boneless chicken breasts (skinless)
1⁄4cflour
2Tbutter
1⁄2csliced mushrooms
1⁄2cdried Montmorency cherries
1cOrchard Country Black Cherry wine
2Tparsley
2Trosemary

Instructions

  1. Lay chicken breasts between wax paper and pound until thin. Cut into strips. Dredge both sides in flour.
  2. In large skillet, melt butter--add mushrooms and dried cherries. Saute over medium heat till browned--approximately 6-10 minutes. Remove and set aside.
  3. Add chicken to skillet and cook 4 minutes on each side till fully cooked. Return mushrooms and cherries mixture to skillet--add wine, parsley and rosemary. Simmer 5-10 minutes or until liquid is caramelized.
