Balsamic-Glazed Chicken Recipe

Chicken breast, carrots, and green beans. Oh, what to make? Here's a two-skillet high-protein main dish that partners well with rice, pasta or garlic toast.
|1 1⁄2||c||baby carrots|
|1 1⁄2||c||green beans - frozen or fresh|
|2||T||olive oil (light)|
|1||lb||boneless chicken breast|
- Place 2 large skillets on the stove. Place the carrots, green beans and water in one pan. Bring to a boil, cover with a lid, and cook on high for about 10 minutes. Slice the chicken breast into 4 equal pieces, in half and lengthwise.
- Next, pour oil into other skillet over medium-high heat. Add chicken pieces and cook for 6-7 minutes. Turn chicken over and continue to cook. Time to check the veggies -- if they are tender, drain them and add them to the chicken. Stir together the balsamic vinegar and oil. Pour over the veggies and chicken and continue to cook for about 3 minutes, stirring occasionally so the glaze coats all the veggies and chicken. Serve when chicken is done in the middle and golden brown on both sides.
