Description
Baking creates a hands-free dish (and frees up the stove top!). If you'd prefer to omit the barley, just replace it with an equal amount of rice. The quick-cooking barley adds a light texture and slightly nutty flavor to this dish -- but it's delicious made with just plain rice also.
Ingredients
| 3⁄4 | c | long-grain or converted brown rice (I used Uncle Ben’s) |
| 1⁄4 | c | quick cooking barley |
| 2 | c | boiling water |
| 1 | T | butter |
| 1⁄2 | t | salt or Adobo seasoning |
| fresh basil leaves (optional) |
Instructions
Combine rice, barley, boiling water and butter in 1-quart casserole; stir gently until butter melts. Cover and bake in 375ºF oven about 40 minutes until tender and liquid is absorbed. Fluff with fork and serve. Top with optional torn fresh basil leaves, if desired.
