Aunt Jo's Vegetarian Burger Recipe

Description

Thanks to my friend Elizabeth for this outstanding vegetarian burger recipe. Don't let the long ingredient list scare you -- these are worth the time. Even though I do purchase pre-made veggie burgers, this saves tons of money: for the price of one package of 4 commercially-made veggie burgers, I can make a double-batch, freeze them, and have 18-20 even-tastier ready-to-cook veggie burgers.

Ingredients

  • 1 1⁄2 cup brown rice (measure uncooked)
  • 1⁄2 cup onion, finely chopped
  • 1 cup mushrooms, chopped
  • 2⁄3 cups carrots, grated
  • 1 cup sharp cheese, grated
  • 1 cup dry oatmeal
  • 2 eggs (or equivalent Egg Replacer)
  • 1⁄2 cup seasoned breadcrumbs (or plain)
  • 1⁄2 teaspoon basil
  • 1⁄2 teaspoon thyme
  • 1⁄2 teaspoon black pepper
  • 1⁄4 cup soy sauce or tamari
  • 1 tablespoon parsley, fresh - chopped (optional)

Directions

  1. Cook the rice in water according to directions (I use a pressure cooker -- it's quick and reliable).
  2. While rice is cooking, prep the remaining ingredients: chop the onion and mushrooms, grate the carrots and cheese. Measure out the oatmeal and seasonings and set aside.
  3. When rice is done cooking, add all remaining ingredients to the rice (if there's room in your pot or pressure cooker, add all ingredients directly to cooked rice). Stir well until it's slightly sticky and all ingredients are mixed evenly.
  4. Using plastic wrap, form into patties about 3- to 4-inches in diameter and 1/2- to 3/4-inch thick (use 1/4- to 1/3-cup of the mix). Alternately, use a burger press to form patties. Wrap each burger individually in plastic wrap and place in a heavy freezer bag. Freeze.
  5. *When ready to cook:*

    1. Pan-fry in small amount of vegetable oil over medium-high heat, 2-3 minutes per side, until golden brown and crispy on outside.
    2. When I'm really in a hurry, I thaw the burgers for 30 seconds in microwave before pan-frying.
