Ideas for Dinner Tonight & Italian Wedding Soup Recipe
Here are some new ideas for dinner tonight, along with a rich Italian Wedding Soup recipe. I like to make a pot of soup at least once a week for dinner. It's satisfying and guarantees that we'll have some leftovers for lunches or a quick dinner over the next day or two.
Beans • enchiladas: with pinto beans, white beans, kidney beans or chickpeas. Wrap beans in soft tortillas, add grated cheese, cover with enchilada sauce and bake (or try this Easy Lentil Enchiladas recipe)
Beef • fajitas: cut boneless top sirloin into strips and season with garlic powder and chili powder. Sauté sliced onions and bell peppers and serve wrapped in soft tortilla with sour cream and salsa
Chicken & Turkey • salsa bake: arrange boneless cuts or tenders in baking pan and bake until partially done (15 minutes), then cover with salsa and bake until done. Add cheese if desired
Salads & Veggies • Quick Marinated Red Beets
Seitan • brown slices or small chunks lightly in small amount of oil (with some minced onion, if you like); add gravy and simmer until warm; serve over toast or biscuits
Veggies (cooked) • sliced carrots sautéed in bit of olive oil; add drained can of greenbeans after several minutes and sprinkle with onion powder and bit of dried rosemary
Dessert • Chocolate Peanut Butter Snack Cake
