Summer Squash Recipe

Summer squash recipes, zucchini recipes, tomato recipes. What I could really use this week: some summer recipe inspiration. Recipes that taste great each time. Recipes that will have the kids spooning up seconds (is that really possible?). Recipes that use the common ingredients I've got on hand and are easy to toss together. Now, you know I like quick recipes the best -- but every now and again I stumble across a mouth-watering recipe that takes a bit more time.

Such is the case with Alison Lewis's Lightened Summer Squash Casserole (she has a cookbook coming out soon too!). It takes more than 20 minutes from start-to-finish, but it's a new take on a veggie that's often overdone by the end of the summer, when piles of zucchini and yellow squash are everywhere, free for the taking 'cause no one wants to touch 'em anymore.

This sure looks like a great way to change-out the same-old, same-old summer squash routine. Thanks, Alison! And it just might have the kids dishing up seconds. Mmmm, Summer Squash Casserole. I'll let you know how we make out.
