Yes, It's Ham Loaf!
Several weeks ago I found an awesome sale on ground pork (remember my excitement in this ham loaf on sale post?). Well, I finally had a chance to make the ham loaf recipe again (to make sure it's A-OK to share with you). It just so happened that earlier this week we had a dreary, rather chilly day and I wanted something quick and easy (what's new there?!) that would bake while I was helping the kids with some homework assignments. So it was with relief that I spotted the two pounds of ground pork in the freezer (gotta love those times when you plan ahead -- always saves the day down the road).
Ham Loaf: this two loaf main dish takes less than 10 minutes to prep and bakes all by itself with no basting or special handling required. All I did was start with my lovely on-sale ground pork, add breadcrumbs, milk and egg, some dried onion and seasonings (yep, it's kinda like meatloaf -- only better), then shape it into two twin loaves, and slide 'em into the oven to bake. Place some potatoes in the oven at the same time and 60 minutes later: voilà, dinner is served.
Depending how many hungry folks you're feeding, you might have some leftover (that's the good part of making two loaves at the same time). Just cool 'em and slice 'em and you've got quite a few days of lunch sandwich fixin's (yep, now you know what I've eaten for lunch this week). This Ham Loaf recipe truly is a standby that dates back to my days as a kid -- it was one of my favorite meals then, and still is.
