Easy Vegetable Recipe: Quick Sauté in Olive Oil

One of my favorite ways to prepare vegetables is to sizzle them in a bit of olive oil, with a dash of salt and herb seasoning (dried oregano, rosemary, basil, etc.). This easy vegetable recipe is a great way to pull together a side dish with the veggies in your crisper drawer.

A while back I spoke with David Grotto, RD, American Dietetic Association Spokesperson, and asked him about sautéing veggies in olive oil. He said: “Lightly sautéing in olive oil is excellent.” He also added that sautéing tomatoes "enhances lycopene absorption which is helpful in preventing breast and prostate problems.” Those are some super reasons to sizzle up a quick batch of veggies tonight.

In this recipe I happened to use red and yellow peppers, carrots and a few broccoli florets -- but feel free to use any veggies in your fridge. This recipe is the ultimate in adaptable!
