5 Easy Pierogies Recipes & Weekday Recipe Ideas: 2/15
Some of my favorite and quickest ideas for dinner begin with a 'starter' from the freezer. Frozen foods like pierogies, ravioli or tortellini are super starters that offer flexibility and versatility. Not only can you choose your cooking style (boiled or pan-fried), you can also adjust the accompanying protein (for both meat lovers and vegetarians).
Today's weekday recipe ideas center around pierogies as the starter (see recipes below):
Beans • drain and rinse one can of black beans, butter beans or kidney beans; add to pierogies and sauce, heat until warmed through
Beef • Easy Meatball Recipe (serve separately or add to pierogies and sauce)
Pasta • 1. Pierogies Recipe: Italian-style
2. Pierogies Recipe: Greek-style with Spinach & Feta
3. Pierogies Recipe: Sausage-n-Onion (see recipe below)
4. Pierogies Recipe: Broccoli-Cheese
Pork • thinly sliced tenderloin, lightly breaded in flour/cornmeal and pan-fried in small amount of oil; season with onion powder and pepper; serve alongside your favorite pierogies
Tofu • baked tofu; serve alongside pierogies (if there's any tofu leftover: great to munch on cold - snacking and sandwiches)
Veggies (cooked) • broccoli, lightly boiled in small amount of water for 3-4 minutes; drain any remaining water and top with one slice of pepper-jack cheese
Seitan • heat briefly in microwave and toss in with pierogies and sauce
