In a Hurry? 15 Easy Breakfast Recipes

Would you eat a healthier breakfast if an easy breakfast recipe was at your fingertips? We’ve all heard that it’s best to start the day off right with a healthy breakfast that includes fruit and whole grains. But the actual doing of it (and not stopping for fast food or coffee and a donut) is another thing altogether. If you’re like me, thinking up “what’s for breakfast” is half the battle. Enter the easy breakfast recipe list.

 When my kids were younger I would make lists so that I could remember what had occurred to me when I was grocery shopping (or just feeling more inspired). It was this list on the side of the fridge that saved me at mealtime. I would jot down super-quick ideas and also ideas that take a bit more time. Then, depending upon how the day was shaping up, I could pick and choose what fit best. I found that making lists like this not only helped make mealtime easier but saved money. I was less inclined to make multiple last-minute trips to the store (“what can I make tonight?”) and the temptation to call for take-out was less compelling too. Plus, I found that we were eating more veggies this way—and if you’re like many other folks this new year: eating more fruits and veggies is a common goal.

Here are 15 easy breakfast recipes – some you already know how to make lickety-split (no formal recipe needed), others link to a simple recipe with instructions. You can adapt the serving size, the sweetener and low-fat/no-fat choices to your own individual dietary preferences and caloric intake needs:

  • Bowl of cereal with sliced banana or blueberries and milk
  • Bowl  of oatmeal with dash of cinnamon and maple syrup/agave
  • Bowl of oatmeal with half a sliced banana and a couple crushed walnuts
  • Bowl of oatmeal with tablespoon of peanut butter and/or dark chocolate chips
  • Yogurt with couple tablespoons of toasted nuts (almonds, peanuts, etc.) and ½ sliced banana, apple or orange
  • Yogurt topped with couple tablespoons of granola
  • Glass of milk with protein powder stirred in
  • Blueberry smoothie (or strawberry, raspberry or your fave flavor)
  • Scrambled eggs with whole-grain toast
  • 3-Minute Omelet with orange juice
  • Egg & Cheese Wrap with orange juice
  • Whole-grain toast with peanut/almond/soy butter and sliced fruit: banana/apple/orange
  • ½ bagel with cream cheese and yogurt or fruit
  • Toaster waffles with yogurt and fruit: ½ banana, orange or berries
  • Ready-to-heat breakfast sandwiches: sausage-egg-cheese or egg-cheese biscuits (these can be such a handy last-minute life-saver!)
