Quick Peach Pie Recipe in-a-Pocket
Was thrilled to recently discover a new quick and easy peach pie recipe posted by a young QQM reader, Jenny. She says it came together rather spontaneously (as many of the best quick recipes do). Apparently she was in the mood for apple pie (hmmm, bet we can all relate, eh?). Unfortunately there was no pie in the house, no crust or crust mix, no bowlful of apples and she didn't even have
a way to get to the store. (Store-bought pies just can’t compare to homemade anyway ... plus, making a pie at 9 or 10pm just to have a slice before bed really isn’t my idea of fun either.) This kid was down on her luck.
So … her mom suggested a few ideas, one of which was creating a “pocket roll-up” made with a soft flour tortilla with cinnamon sugar for the crust and a filling of diced apples sizzled in a pan quickly (with some sugar). She was open to this dessert snack experiment! That’s when she discovered the last and only apple in the house was soft and mealy. Not even in good enough condition to salvage with cooking and spices. But there were PEACHES. Hmmm, a sugar-crusted peach pie roll-up was sounding better and better. So she made the sugar-crusted tortilla, peeled and diced a peach, sizzled it for a couple minutes and wrapped it all up.
Peach pie with milk. Perfect for a bedtime snack. She calls it Peach Pockets. I just call it delicious. Best of all, it’s lickety-split quick. I bet this would make a fantastic pie-in-a-pinch with just about any fruit you’ve got on hand. We’ll thinking of trying apple soon too – how ‘bout you?
