What Meal Could You Use the Most Help With?

Dinnertime can be tough. It's squeezed right in there between work/school and evening classes and activities. What to make that's quick, easy and satisfying? Yet it's the meal that's best when our family can sit down together. You know, to talk and connect about our day. Not just grab fast food on the run. No, in my most beautiful life visions I see us sitting down to steaming plates, taking time to eat home-cooked goodness, allowing the busyness of the day to fade away and letting the rejuvenating power of the hot food do its magic. Then reality hits. I've got 25 minutes before we need to hop in the car. What can be pulled together that's quick, easy, and tastes great? Unfortunately I didn't plan ahead and put anything in the crockpot. And it's too late to utilize the easy baking power of a Dutch Oven meal. What to do?

Dinner is definitely the meal that I need the most help with. Breakfast is usually easy since it's yogurt, fruit, granola, eggs, bagels (any combination works, really), and lunch -- well, let's just say the Earl of Sandwich has that one covered.
