Quick Easy Chicken and Tofu Recipes Go Greek
I was looking for quick easy chicken recipes and tofu recipes--easy ones since I didn't have much time to pull a meal together. Was thinking of quick easy recipes AND Greek after eating at a Mediterranean bistro (Baba Ghannouj) when traveling for business in Cary, North Carolina, recently. Such fabulous food! Such a beautiful area! I arrived home wondering why I don't eat Mediterranean-style ALL THE TIME since I love it so much. Hmmm, could be 'cause some of our local Lancaster County stores don't carry a huge selection of Mediterranean foods. Time to move? Time to shop somewhere new.
So I drove a little further to go shopping at a different store: one that has an olive bar, a fine selection of cheeses, and pita bread (but I still have to find a good source of flatbread -- any recommendations?). This quick easy meal was coming together: chicken for the guys and tofu for the girls, similar balsamic vinegar and oregano seasoning on both, topped with crumbled feta and Calamata olives. Best of all this Tofu Greek-style and Chicken Greek-style can be cooked side-by-side. They use the same ingredients and cook for similar times -- just the protein is different. Pair up with pitas or flatbread with little cups of Italian or Greek salad dressing for dipping (and for extra flavor zing). The leftovers were A-1 the next day too: the tofu paired perfectly with ravioli (I cut it into cubes and warmed it with some Italian dressing), and the chicken traveled quite well for the guys' lunches (think sandwiches or salad).
