Crockpot Chicken Italiano

This particular crockpot chicken recipe is one that was inspired by a recipe called Mimi's Best Chicken from the book The Not-strictly Vegetarian Cookbook (I have the older version) by Lois Dribin and Susan Ivankovich. It's a cookbook filled with stellar recipes -- every single recipe that I have made from this book is a winner. It's also an excellent fit for our household since we have vegetarians and carnivores living together. It's been many, many years that we've been making Mimi's Chicken ... for company, for weekend dinners, basically whenever we wanted to fill the house with delightful Italian aromas.

So when I needed a quick crockpot chicken recipe, I thought of Mimi. Naturally. Her combination of veggies and seasonings served as the inspiration for Crockpot Chicken Italiano.
