Easy Vegetarian Recipe: Tempeh Quick-Fried with Soy
The first time I made this easy vegetarian recipe, I used it as a
protein boost for a tossed salad. I had picked up several packages of tempeh with grand aspirations of making a garlic-onion marinade (ha!), or a vegetarian shepherd's pie (double ha!). With the way time has been slip-sliding by, I've barely had a chance to eat much less make something that would require more than 10 minutes of prep plus cook-time. So I was back to square one with the package of tempeh staring me down. What easy vegetarian recipe could I make? What if I sliced and flash-cooked it in a pan, allowing the seasoning to quickly sear into the tempeh slices? It was worth a try.
Good news -- it turned out fantastic: I call it Tempeh Quick-fried with Soy. It's a great way to top a vegetarian chef's salad, to boost the protein of a vegetarian pasta dish, or just eat plain (makes a mighty good and easy vegetarian sandwich too). Try it and let me know what you think!
