Ham Loaf on Sale

Simple pleasures. I don't know if it's the noticing or appreciating that's more important, but I do know that having something to look forward to makes each day better. You know, the little things that really count. Often that very thing I'm looking forward to is something good to eat. Now there's a simple pleasure. Something that hits the spot. Something that settles in and satisfies.

Food, shelter, clothing. Who can even think about other more lofty ideas when these basic needs aren't fulfilled. And then there's other folks (yeah, like me!) who spend extra time thinking about food in all its glorious forms. Just happened yesterday when I stopped at the grocery store and found my favorite ground ham loaf on sale. Now there's a 5-pound value bag of happiness. We're gonna have baked ham loaf for dinner! Gotta luv when those dinner answers appear -- that's always a weight off the mind. All I did was add breadcrumbs, milk and egg, dried onion and seasonings (think like a meatloaf recipe), shape it into two twin loaves, and slide 'em into the oven to bake. Add baked potatoes, salad or another quick veggie. It's less than 10 minutes to prep and it takes one self-baking hour for a delicious meal to emerge from the oven. Perfect when I have an hour's worth of work to keep me busy (no problem there!). Of course, when I need a faster meal and don't have an hour's worth of oven-time to spare, I make these Ham Loaf Patties with Peas and Potatoes (changing out the peas and potatoes for veggies on hand as needed!).
