Quick Meal Recipe: Cabbage + Cream Cheese

When you open your fridge and it's lookin' rather picked-out, what do you do? Close it and call for take-out? Sigh and go for fast food? Just cry 'take me out of here' please? Or praise your lucky stars that someone else is cooking tonight?! ;-) There's definitely challenge in figuring out what to make day-in and day-out. The daily grind can take it out of ya, and that's when it sure can help to have a helping hand at mealtime.

Take this, for instance: there's half a head of cabbage in the crisper drawer and a couple tablespoons of cream cheese left in the package. Who would dream at first glance that these are the makings of a delicious side dish? This Cream of the Crop Cabbage Recipe is not only easy but very adaptable. If you don't have the olive oil spread/butter, don't fret. I've made this without and it still tastes great. Not quite as rich, but believe me, it'll do. No light olive oil either? Not a deal breaker. You can easily sub in the oil you have on hand, or just simmer the cabbage in the 3/4 cup water.
