Easy Comfort Food: Sugar Cookies

Ever since I first tasted these soft sugar cookies (over 20 years ago), they were an instant favorite. My father-in-law has traditionally made these each Christmas, topping each with a raisin or a light sprinkle of sugar. In the years since, we have not only baked them annually at the holidays but also throughout the entire year.

Easy Appetizers for the Holiday Rush

As soon as I tasted these at my mom's house, I had to have the recipe. She had prepared a large plate of these easy-to-pop-in-your-mouth delicacies, and it seemed that I was well on my way to clearing the entire plate all by myself. The thin baguette slice topped with herbed cream cheese and thin slices of cucumber hit the spot perfectly.

Mmmm, Macaroni Salad

Macaroni salad is one salad that the deli tries hard to make well ... but sorry, those pre-made deli versions just can't compare to homemade. Especially when a homemade batch can be whipped up in less than 15 minutes. Who needs the deli?!  And who wants to wait til summer picnic season? If you like your macaroni salad not-too-sweet and not-too-vinegary, then this one will be juuusssst right.

Country Comfort Cookbook Recipes by Monica Musetti Carlin

Today we have a very special guest: Monica Musetti-Carlin, co-author of the Country Comfort Cookbook Series. She's sharing two wonderful recipes that use tofu (one of my favorite vegetarian proteins) that take only 20 minutes to prepare (gotta love it!): Veggie Tofu Stir-Fry and Extremely Satisfying Mexican Tofu.
